Scotch Eggs

    6 hardboiled eggs, peeled
    1 uncooked egg
    2 lbs ground meat (a mix of beef & pork is delicious!)
    1 onion, diced
    2 T water
    fresh herbs like parsley, cilantro, sage, or thyme, to taste, chopped
    optional: dry seasoning for flavor values riation (nutmeg, allspice, etc!)

    Preheat oven to 350F. In a large bowl combine the meat, raw egg, onion, water, and herbs and mix well until blended. Separate the meat into 6 even portions. One at a time, flatten each meat portion and then shape it around a hardboiled egg until the egg is covered completely. Repeat for the remaining 5 hardboiled eggs.

    Place Scotch eggs into a baking pan and cook for about 30-35 minutes until the meat is cooked through. Let sit for a few minutes before serving. Can store in the fridge for a few days, heating up in the toaster to warm as needed for amazing breakfast nourishment!

    Optionally: Scotch eggs may also be pan fried in ghee or coconut oil rather than cooked if preferred!
